Do you ever sit down to meal plan and draw a complete blank? I know I do. You would think that after making hundreds and hundreds of meals for my family I wouldn’t have this problem but I still do from time to time (hence why I try to always plan my meals ahead!)
There have been several periods of time where we’ve decided to aim for a more low-carb diet. (Probably should again but that’s a discussion for another day haha.)
When I decided to go low carb in the past it definitely complicated meal planning for me because so many of our regular easy meals involve bread or pasta. (Yay for cheap fillers!)
However, as I looked through my recipes and scoured Pinterest I realized that there are quite a few good family friendly low carb options. In fact, many of my family’s favorite meals can be adapted to be low carb.
So, today I’m sharing with you four weeks of low carb dinner ideas that are family friendly and easy on the budget.
Now, please note that I’m talking about a low carb diet rather than no carb diet. The family dinners I’m sharing in this blog post are certainly low carb – and some may even work on a keto diet – but they are definitely not all completely no carb so keep that in mind.
With that being said, here are some of my favorite easy low carb meals!

Easy Low Carb Meals – Four Weeks (28 Days) of Dinner Ideas!
I’ve divided these easy low carb recipes into the categories of chicken (clearly I cook with chicken the most because I have the most recipes in this category), beef, pork, and miscellaneous. Again, these are meals that are either already low carb or can be easily adapted to be low carb.
As a mom of five I’m a big fan of simple meals that will work even on a tight budget, so if you’re looking for gourmet you may want to look elsewhere. But if you just want some good low-carb recipes that the whole family will love, read on!

Low-Carb Chicken Recipes
- Parmesan chicken Season some chicken breasts or strips with parmesan cheese and whatever other seasonings you prefer (just skip the breadcrumbs), top with tomato sauce and cheese, and bake for thirty-ish minutes. So good!
- Salsa chicken
- Chicken drumsticks Again, I just leave out the potatoes in this recipe when I want a low carb meal.
- Stir-Fry (served without the rice)
- Chicken salad served on lettuce
- Teriyaki chicken Just skip the rice!
- Rotisserie chicken Have I mentioned how much I LOVE Costco’s rotisserie chickens?!
- Chicken soup I like to make my soup with the rotisserie chicken carcass. Bone broth is so good for you!
- Greek salad with chicken
- Grilled chicken with bell peppers and onions (serve with salsa, cheese, sour cream, guacamole, etc. Essentially fajitas without the tortillas)
- Roasted chicken thighs with green beans, cauliflower, carrots, etc. The perfect meal for a special occasion because it always turns out looking pretty and tasting even better!
- Air fryer chicken strips (just leave out the bread crumbs)
Low-Carb Beef Recipes
- Crustless taco pie
- Meatballs – just leave out the breadcrumbs! You could eat them plain or over cauliflower rice if you prefer.
- Pot roast –Just substitute veggies for the potatoes.
- Bunless burgers – Bunless burgers are one of my very favorite easy low-carb meals! Serve them topped with cheese and avocado (yay for healthy fats!) and you won’t even miss the bun.
- Beef stroganoff (served over cauliflower rice if desired)
- Taco salad – Just skip the tortilla chips!
- Zucchini beef skillet
- Beef Vegetable Soup (substitute cauliflower for the potatoes)
- Chili (Use your favorite recipe but skip the beans for less carbs)
Low-Carb Pork Recipes
- Roasted sausage with veggies (beef or chicken sausage could be used as well)
- Crockpot pork loin
- Creamy pork chops (could serve over cauliflower rice)
Other Low-Carb Meal Ideas
- Frittata
- Omelete
- Charcuterie plate This is the easiest meal ever – just fill a plate (or board) with a selection of meats, cheeses, veggies, olives, and nuts.
- Breakfast for dinner – Sometimes nothing hits the spot more than some yummy scrambled eggs and bacon!
