Do you ever sit down to meal plan and draw a complete blank? I know I do. Even when I can think of meals I tend to get stuck in a rut and make the same ones over and over.
Lately we’ve been trying to cut back on our carbs (I know, SAD!!) This has definitely complicated meal planning for me because so many of our regular easy meals involve bread or pasta.
But, thanks to a little brain storming (and Pinterest!) I’ve come up with a decent list of easy low carb meals that work well for our family. I thought I’d share it here on the blog in case it might be helpful to any of you!

Easy Low Carb Meals – 3 Weeks of Dinner Ideas!
Burgers
These are one of my very favorite easy low carb meals! Skip the bun and serve them topped with cheese and avocado – YUM!
Crustless taco pie
Meatballs
(Just leave out the breadcrumbs!)
Parmesan chicken
Season some chicken breasts or strips however you prefer (just skip the breadcrumbs), top with tomato sauce and cheese, and bake for thirty-ish minutes. So good!
Salsa chicken
Roasted sausage with veggies
(like pictured below, minus the potatoes haha)
Chicken drumsticks
Again, I just leave out the potatoes in this recipe when I want a low carb meal.
Stir-Fry

This is the easiest meal ever – just fill a plate (or board) with a selection of meats, cheeses, veggies, olives, and nuts. Yum!
Frittata

Have I mentioned how much I LOVE Costco’s rotisserie chickens?!
Chicken soup
I like to make my soup with the rotisserie chicken carcass. Bone broth is so good for you!

Just substitute veggies for the potatoes.

Sometimes nothing hits the spot more than some yummy scrambled eggs and bacon!
