Who doesn’t love muffins?! The basic muffin recipe I’m sharing with you today is perfect for every occasion and only requires a few basic ingredients.
I got this recipe from my mom who got it from a friend years ago now. I love that I can quickly whip up a batch to enjoy with breakfast or when I need a quick side for taco soup.
And with all the craziness that’s going on right now, it’s great to have a quick and easy muffin recipe to make if you don’t have bread or you’re out of ingredients for other things.
Sometimes I make regular sized muffins (the recipe makes 12) and sometimes mini-muffins (pictured above.) Both are wonderful!
The recipe calls for a quarter cup of sugar which makes the muffins just slightly sweet but not too sweet. They really go well with about anything.
Anyway, without further ado, here is my favorite basic muffin recipe!
Basic Muffins for Every Occasion
Ingredients
- 1 egg
- 1 cup milk
- 1/4 cup oil
- 2 cups flour
- 1/4 cup sugar
- 3 tsp. baking powder
- 1 tsp salt
Instructions
- Heat oven to 400 degrees. Grease a 12-muffin tin and set aside.
- In a large bowl, beat egg, then stir in milk and oil.
- In a separate bowl, mix together the remaining 4 dry ingredients.
- Add the dry ingredients to the wet ingredients. Mix until just combined - the batter will still be lumpy.
- Fill the muffin tin and bake for 12 minutes.
- Remove muffins from the tin immediately.
