I love beef stroganoff and these sandwiches are a fun and delicious spin on the traditional recipe!
These sandwiches make a simple, delicious meal and are easy to throw together when you don’t have much time. This recipe is a favorite from when I was growing up and I know you’ll love it too.
I’m sharing the most basic way to make these open faced sandwiches, but you can personalize them to your taste by adding mushrooms to the meat mixture, sprinkling chopped green peppers and tomatoes on the top, or whatever else strikes your fancy.

Feel free to experiment with what kind of cheese you use as well. I always just use whatever I have on hand which is typically cheddar, “Mexican” blend, or Colby Jack.
I love serving these beef stroganoff sandwiches with a side of chips or a nice summery salad, but a side of soup is another great option that would turn it into a great fall/winter meal.
