We had a good weekend. Saturday I think we might have hit 70 degrees here in Texas! I wish we could have some snow but if we can’t have snow then I’m all about the occasional warmer temps. 🙂
We may still have a chance for snow though because sometimes it seems that February is one of our coldest months. We’ll see . . . I love making crock-pot recipes during the cooler months of the year so I don’t want the cold to go away too quickly!
It’s kind of funny actually, because crock-pots are great for the summer to keep you from using your oven but I still tend to think of them as more for the fall/winter. I guess it’s because a lot of the meals I make in the crock-pot just don’t seem summery, like pot roast for instance.
ANYWAY, I’ve been enjoying using my crock-pot a lot lately and I’m excited to have another simple crock-pot recipe to share with you today.
I rarely buy pork but I found a great deal a few months ago and decided to branch out a little. I googled a few recipes but ended up just kind of winging it – and I loved how it turned it.
I made it again just a week or so ago. The first night we had the pork sliced with cooked onions (I threw them in the crock-pot with the pork) and a couple sides. Then later in the week I shredded the leftover pork, added BBQ sauce and served it on Hawaiian rolls. This made us at least two more meals and was so yummy. I love a recipe that makes enough for several meals!

*Note: Just FYI, though it’s not in my recipe I added rosemary along with the thyme and garlic the first time I made this recipe (when all the pictures above were taken). I decided that less is more and left out the rosemary after that but it’s a good option too. 🙂
Here’s the recipe!
Pork Loin, Two Ways
Ingredients
- 1 large onion
- 1 pork loin (3-4 lbs)
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp thyme
- 1 tsp salt
- 1/4 tsp pepper
Instructions
- Peel onion, chop into quarters and place in crock pot.
- Rub pork loin on all sides with olive oil.
- Mix together garlic powder, thyme, salt and pepper.
- Sprinkle mixture evenly over pork loin and place pork in crock pot on top of the onions.
- Cook on high in the crock-pot for about 6 hours.
- Slice and serve, or shred and serve on rolls with your favorite BBQ sauce.
