We had another rainy day last week – and many more since then haha – so since I was cooped up in the house I gave in to my chocolate craving and made some brownies.
I am a HUGE fan of brownies and I have made who knows how many batches in the (almost) three years that I’ve been married. While I prefer to bake my cakes from scratch, I’ve almost
always made box brownies, because, well, it’s fast and they taste pretty perfect to me (with a cup of chocolate chips thrown in of course!!)
But on this rainy day I didn’t have a box mix on hand so I decided to actually make them from scratch. I was pleasantly surprised with how they turned out; definitely a step up from box brownies. I think what made the difference was the chopped bars of chocolate that the recipe called for instead of cocoa powder.
As you can see, I broke my chocolate up into pieces and melted it on the stove with butter. It took awhile because I only turned the burner to medium heat; I wanted to make sure not to scorch the chocolate!
Once the chocolate was ready the rest of the recipe was quick to throw together. Here it is:
Ingredients:
- 1 cup butter, cubed
- 6 oz. unsweetened chocolate, chopped
- 4 eggs
- 2 cups sugar
- 1 tsp. vanilla
- 1/2 tsp. salt
- 1 cup all-purpose flour
- 1 cup chocolate chips
Instructions:
Preheat oven to 350 degrees. Melt butter and chocolate in a small saucepan over medium-low heat. Remove and let cool a bit.
In a large bowl, combine eggs, sugar and vanilla. Then add the slightly cooled chocolate mixture. Add in the flour, making sure it is all mixed in. Finally, add the chocolate chips.
Pour batter into a greased pan. (I used an 8 x 11.) Bake for 40 to 45 minutes. I try to check mine pretty often towards the end of the baking time because they’re best if they’re not over baked!
These brownies are deliciously rich and fudgey! I enjoyed some and then froze some for later. By the way, if you’ve never eaten a frozen brownie, you should. So. good. 🙂
Anyway, here’s one more picture… Caleb’s little head popped into view right before I took it. He’s eyeing that brownie longingly haha!
