I haven’t been posting as many recipes here on the blog lately, but today I thought I’d pop on and share a new one: our favorite easy tostada recipe! This will be a short blog post because this recipe is so easy – so don’t blink or you’ll miss it. 😉
I know we are all busy at this time of year and we’re often looking for simple meals. This easy tostada recipe is just what you need when you want something yummy for dinner but don’t have much prep time. Your whole family will love it!
So, in case you are unfamiliar with what tostadas are, they are corn tortillas that have been toasted or deep fried and are generally eaten topped with lots of yummy ingredients. You can buy packages of tostadas at the store – we usually get ours from Aldi.
Here’s what we use for our easy tostada recipe:
- 1 package of tostadas
- 1 can of refried beans
- chopped lettuce
- shredded chicken (we like to use leftovers from a rotisserie chicken)
- shredded mozzarella cheese
- salsa
- sour cream or Mexican crema
You can of course add any other toppings that your heart desires! Avocado, cilantro, chopped onion, etc. would all be nice additions if you have them.
All you do is spread some refried beans (heated or room temperature) on your tostadas and then pile on all of the toppings. Yep, it’s that easy!
