Who out there is a meatloaf fan? Who hates the stuff?
Well today I’m here to share my mom’s meatloaf recipe with you. For those of you who are just weirded out by the whole idea of a loaf of meat, don’t write this recipe off! My mom’s meatloaf is the only kind I really care for and I bet you that if you give it a try you’ll love it too. 🙂
I’ve never been a fan of meatloaf covered in red sauce – sweet red sauce no less. Yuck! (Sorry if that’s your thing!) I love that my mom’s meatloaf stands alone beautifully without any sauce on the top.
I also like the texture of my mom’s meatloaf. It’s not just a big, dense blob on your plate. Now, since it’s not as dense as some meatloaves the slices can kind of fall apart sometimes (see my pictures for proof) but the flavor more than makes up for that little flaw. 😉
You may wonder why I decided to post a recipe for meatloaf during the month of June in Texas. Well, I just felt in the mood for it haha. And really, you can totally make meatloaf into a summer meal by serving a nice summer salad and some crusty bread or potato wedges on the side.

Mom’s Meatloaf
Ingredients
- 1 1/2 lb. ground beef
- 3/4 cup oats
- 1 cup tomato sauce
- 2 eggs, beaten
- 1/4 cup chopped onion
- 2 tsp. salt
- 1/4 tsp. pepper
Instructions
- Preheat oven to 350 degrees.
- Combine all ingredients thoroughly and pack firmly into a loaf pan.
- Bake uncovered for 1 hour. Let stand for at least 10 minutes after removing from oven.
