Spring is almost officially here and to celebrate I decided to bake a loaf of strawberry bread! This bread is amazing warm from the oven and it also freezes great which is nice, if you have any left to freeze haha.
Unfortunately I can’t remember where this recipe came from so I can’t credit anyone, but thank you to whoever it was because it’s definitely been enjoyed a lot!
Ingredients
- 1/2 cup butter, room temperature
- 3/4 cup sugar
- 3 eggs
- 1 teaspoon vanilla
- 2 cups flour
- 1 teaspoon cinnamon
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup plain yogurt (or sour cream)
- 1 1/2 cups strawberries, diced
Instructions
- Preheat oven to 350 degrees.
- In a large bowl, beat butter and sugar until light and fluffy. Add eggs and vanilla and beat well.
- In a separate bowl, mix together the flour, cinnamon, baking soda, baking powder and salt.
- Add half of the dry ingredients to the butter mixture (mixing only until combined), then add the yogurt and finally add the rest of the dry ingredients. Carefully fold in the strawberries.
- Pour the batter into a greased bread pan and bake for 60-70 minutes or until a toothpick inserted in the center comes out clean.
