Hi friends! Fall is here and I’m loving the slightly cooler weather here in Texas. It seems to me that once fall hits, the rest of the year just speeds by!
With Thanksgiving just around the corner it’s a great time to be thinking about what you’re thankful for (although it’s always a great time for that, right?)
I originally wrote this post a few years ago and teamed up with some great bloggers for what we called The Thankful Challenge – basically, we all shared some things we were thankful for along with some happy fall things like recipes, crafts, etc.

So, what am I thankful for? Well back when I originally wrote this post I elaborated a good bit on what I was thankful for, but in the interest of keeping this post a bit shorter (no one likes super long recipe posts) I just share one thing:
I am particularly thankful this year for God’s providence. What do I mean by that? I mean that I am thankful that He knows everything that’s going on in the world at large, in our nation, and in my family’s lives.
And not only does He know what’s going on, He is in control. And even when things seem crazy or bad and I feel anxious I can remind myself that someday He is sovereign over it all and that someday He is going to set everything right again.
So, that’s something I am thankful for right now in 2021.
Now, onto these amazing Apple Donut-Muffins!
What are donut-muffins?
Well, basically you make muffins (mini muffins in this case) and then dip them in butter and roll them in a sugar mixture and they turn into donut-muffins! Easy and yummy (pretty much the criteria for every new recipe I choose to make haha.)
I love that these little donut-muffins have apple in them because apples just seem so fall-y! I grated the apple in this recipe, but if you want it to stand out even more I would suggest finely chopping your apple instead.

How to Make Mini Apple Donut-Muffins

Instructions
In another bowl, whisk together butter, egg, milk and apple. Add to the dry ingredients and mix just until combined.
Put mixture into greased mini muffin pans. Bake at 375 degrees for 10-12 minutes.
Let muffins cool slightly, then dip in melted butter and roll in cinnamon/sugar mixture.
