Today’s recipe is for the super easy homemade chicken noodle soup that I make for my family.
I love making soup because it’s such an easy dinner idea, plus most soups make for a pretty frugal meal too (and with six kids I’m always trying to save money where I can!)
It’s taken awhile for my kids to like different kinds of soup (and is still a work in progress) but I find that chicken noodle soup is quite kid friendly because what kid doesn’t like noodles?
In this recipe I cook the noodles right in the chicken broth, but it also works to make a basic chicken noodle soup and then add in some already cooked pasta. I’ve done it both ways!
I typically make my own chicken broth and freeze it, so that’s what I usually use for this soup, but you can definitely use store-bought as well.
Because the veggies and the noodles help to bulk up this soup, you only need to use two cups of chicken for this chicken noodle soup recipe. You can certainly use more if you’d like, but I appreciate having some recipes that only use 2 cups because it’s perfect for when you just have that amount of leftover shredded chicken from another meal.
Easy Chicken Noodle Soup
A simple and nourishing soup that the whole family's sure to love.
Ingredients
- 2 large carrots
- 3 stalks celery
- 1 small onion
- butter or olive oil
- 6 cups chicken broth (I usually use homemade)
- 2 cups shredded chicken
- 2 cups egg noodles (uncooked)
- salt and pepper to taste
Instructions
- Chop up carrots, celery, and onion and saute in a pan with a bit of butter or olive oil until slightly soft.
- In a large pot, add chicken broth and bring to a boil.
- Cook egg noodles in the chicken broth for a minute or two less than package instructions.
- Add chicken and veggies to the pot along with salt and pepper to taste. Simmer on low or serve right away.
