Poppyseed chicken is a famous recipe in my family. Growing up, someone brought us poppyseed chicken after one of my siblings was born and after that it became a family favorite. It was often the chosen meal for birthdays (and there were a lot of birthdays to celebrate in our family of fifteen!)
I’ve included poppyseed chicken in several of my meal plans here on the blog, but I’ve always had to link to other similar recipes because I could never find one that’s exactly how my mom made it.
So today I decided enough is enough haha. I’m finally going to share with you exactly how my mom (and now I) make poppyseed chicken.
Be warned, this is not the most healthy recipe you’ll ever make. It’s pure comfort food through and through. But it is a wonderful meal for when you need something that you can throw together with very few ingredients that you know everyone will love.
Poppyseed chicken is also a really great recipe to take to moms who just had a baby or anyone else you might be taking a meal too. It’s a great crowd pleaser for sure.
Don’t have poppyseeds on hand? Don’t worry, you really don’t need them. I think they just add to the presentation.
Easy Poppyseed Chicken Over Egg Noodles
Ingredients
- 3 cups cooked chicken
- 1 cup sour cream
- 1 can cream of chicken soup
- 3/4 stick butter, divided
- 1 sleeve Ritz crackers
- Poppyseeds
- 1 package of egg noodles
Instructions
In a large bowl, melt 1/2 a stick of butter. To the melted butter, add the cream of chicken soup, sour cream, and chicken. Stir to combine.
Spread chicken mixture in an 8x8 glass baking dish.
Empty a sleeve of Ritz crackers into a ziplock bag and crush. Melt the remaining butter and combine well with the crushed crackers.
Sprinkle the crushed crackers on top of the chicken mixture and top with poppyseeds.
Bake at 350 degrees for 25-30 minutes.
While the poppyseed chicken is baking, cook a package of egg noodles according to the directions on the bag and drain.
Once the dish is done baking, let cool for five minutes and then serve on top of the egg noodles.
