Hey guys! I’m so excited to share this Greek salad with chicken today. Somehow salads just don’t appeal to me as much during the winter but since it’s spring now I’ve been totally in the mood for them again. Anyway, this Greek salad with chicken is hands down my favorite hearty salad. The flavor combinations are just perfect, in my humble opinion.
I found the recipe for the dressing on the internet (of course) but it’s been a few years and I can’t find the original source. If you happen to stumble across it please let me know as I would love to credit them!
If you’ve been following my blog for awhile you’ll recognize this salad because I posted about it a year or so ago. My pictures were pretty lousy though and the post itself never got much traction so I decided to scrap it and post a newer, better version. 😉
While this Greek salad would taste delicious with any type of chicken – or even without it at all – our favorite way to enjoy it is with grilled chicken. We pretty much always use this marinade when we grill and the chicken turns out so delicious!
On the recipe below I only included specific amounts for the dressing ingredients; feel free to make your salad as large or small as you want. 🙂
Also, in case you were wondering, I forgot and photographed my salad before adding the cucumber… oops!
Anyway, here’s the recipe, along with a few pictures. Enjoy!
Greek Salad with Chicken
Ingredients
- 1/3 cup red wine vinegar
- 2 Tbsp olive oil
- 1 tsp dried oregano
- 1 tsp garlic powder
- 1/4 tsp salt
- 1/4 tsp pepper
- Romaine lettuce
- Chicken, grilled and chopped
- Grape tomatoes, sliced in half
- Cucumber, peeled and chopped
- Black olives, sliced
- Feta cheese
Instructions
- Whisk together vinegar, olive oil, oregano, garlic powder, salt, and pepper. Set aside.
- Combine lettuce, chicken, tomatoes, cucumber, olives, and feta in a large bowl.
- Add as much dressing as desired and toss to coat.
