A Week of Easy Budget Family Dinners for $65 at Walmart
Baked Chicken Parmesan (the “fancy” meal on this menu)
This is what I’d consider the “fancy” meal for the week. 🙂 Baking the chicken parmesan makes it healthier than the fried version and it’s still super delicious! I always serve chicken parm with bow tie pasta (a tradition passed on from my mom) and a frozen veggie is an easy and cheap way to get in some more nutrition.

I don’t have a link to my chicken parmesan recipe (yet! I’ll try to share it on the blog soon!) but here’s how to make it in a nutshell. I cut about 3 large chicken breasts into smaller cutlets, dip in egg and then in a mixture of bread crumbs, parmesan cheese, garlic, and Italian seasoning, and bake until cooked through. Then I top the chicken pieces with some tomato sauce and mozzarella cheese and let them cook just a bit more until the cheese is melted. Yum!
Chicken Spaghetti (great for large families!)
This chicken spaghetti recipe from The Pioneer Woman is so simple and only uses two cups of shredded chicken! While I usually prefer whole wheat spaghetti, for this recipe we’ve decided that it really does turn out better with regular spaghetti rather than the wheat variety.

Serve it with a simple salad on the side and you have an easy, budget-friendly meal that will easily feed the whole family!
Chicken Biscuits (easy weeknight option)
These simple little chicken and cheese stuffed biscuits are the perfect on-the-go meal. We’ve finally gotten to the point where I need to double the recipe (family of soon-to-be eight over here!) but the regular recipe makes eight biscuits and should feed most families just fine. This recipe also only calls for two cups of chicken!

Serve with raw veggies or a simple frozen veggie.
Taco Soup (cheap and easy!)
This is everyone’s favorite soup in our household and I love how easy it is to make! Just dump everything in the pot (or slow cooker) and let it cook away! I’ll often serve it with a side of this yummy homemade French bread.

Taco Stack-Up (serve-yourself dinner idea)
I could eat “Taco Stack-Up” every day and not get tired of it! I just cook up a pot of black beans, rice (usually brown), and a pound of ground beef with taco seasoning. Then I make sure to have all the toppings: lettuce, tomato, avocado/guac, sour cream, cheese, and tortilla chips. Combine everything on your plate according to your liking and you’ve got a taco stack-up!

I love that this can be a serve-yourself style meal. Just set out all the ingredients and let everyone put together their own plate however they prefer!
Pizza Bagels (easy Friday night meal)
Yay for easy meals! We like to make pizza bagels occasionally on a Friday night to enjoy while watching a family movie. I’ll often let one of my little boys help me throw them together.

All you need are some plain bagels, tomato sauce, mozzarella cheese, and pepperonis and you’ve got some great little pizzas that everyone enjoys! I’ll usually serve them with some raw veggies on the side.
Leftover night (save money and reduce food waste)
I’m a big fan of always scheduling a leftover night. This gives me a night off cooking and it helps to limit our food waste.
We do eat leftovers for lunch pretty often but we still typically have enough for a leftover night once a week.
